There are three methods that I know of to prepare Lutefisk.
#1 One is to wrap lutefisk in cheese cloth and cook in boiling salt water for about 5 minutes. Checking to ensure it is not over cooked. Cooking too long will make the fish go into many pieces and become slimy.
#2 The second way I have cooked lutefisk is wrapped in foil with the foil puncture in a few places for steam to release. I baked the fish which I had put wrapped in foil in a shallow pan for about 1/2 hour at 350 degrees.
#3 The third way is the microwave. Which I find is the easiest. I purchase the lutefisk all wrapped and sealed in a bag. It has the directions right on the bag. I purchased what I bought at Woodman's. I do know that Copps and other stores as that has it during the months that Lutefisk is advertised.
Lutefisk is a fish that you either like it or not. One has to acquire a taste for it. The best way is to go to a church supper or an organization that advertises a dinner and give it a try before trying to do it yourself. It has lots of bones.
Serve lutefisk with lots of butter, potatoes and/or rutabagas.
